- 15 Days from Roast: This is the peak flavor window. After 15 days, the complexity starts to dip.
- 15 Minutes from Grind: Once you grind a bean, you increase its surface area by a million percent. Oxygen attacks it instantly. Try to brew within 15 minutes of grinding.
- 15 Minutes from Brew: Coffee is best when it’s hot and the aromas are active. Don't leave it in the pot for three hours. If you need to keep it hot, use a thermal carafe, not a burner.

Home Brewing 101: Keep It Simple
You don’t need a lab coat to brew a decent cup. Focus on these three variables:
1. The Water
Coffee is 98% water. If your tap water tastes like a swimming pool, your coffee will too. Use a simple filter. Your taste buds will thank you.
2. The Ratio
A good starting point is 2 tablespoons of coffee for every 6 ounces of water. Adjust from there. If it's too strong, add water. If it's too weak, add more coffee. It isn't rocket science.
3. The Temperature
You want your water hot, but not "boiling your face off" hot. Aim for about 200°F. If you don't have a thermometer, just let the kettle sit for 30 seconds after it whistles.
